I am driving from Las Vegas NV. to Wichita KS.Via the I70!?

I am not in a big hurry but would like to get at least 8hrs a day of driving in. Any suggestion of cool,fun and scenic places to stop? I will be traveling with my wife (33) and my two daughter (22) & (16)
